Here is an easy miso soup recipe we make at home with just a few simple ingredients. We buy our miso paste at Whole Foods or Sprouts.
Ingredients:
4 cups of water
3 tbsp of white miso paste
1 cup of sliced mushrooms and or zucchini
1 small chopped onion
2 minced garlic cloves
2 tbsp of chopped scallions
1/2 cup of cubed tofu or 1 egg (or any protein you like)
Instructions:
In a large pot, sauté the onion and garlic until soft and fragrant.
Add the sliced mushrooms and continue to cook for a few minutes.
Pour in the water and bring it to a boil.
Reduce the heat and let it simmer for 10 minutes.
Take a small amount of the soup broth and mix it with the miso paste until it becomes a smooth mixture.
Add the miso mixture and cubed tofu to the pot and cook for another 2-3 minutes.
Garnish with chopped scallions and serve hot!
