Wishing Wellness Chimichurri
Chimichurri is a traditional Argentinian marinade and sauce.
This recipe yields about two cups- we keep it in a glass container and use as a sauce, dressing, marinade etc.
Keeps well for a week or two. Feel free to substitute with any fresh herbs that you have on hand. This is a very forgiving recipe and tastes great every time we’ve experimented with it.
1 shallot, finely chopped
1 chile or jalapeño
lots of garlic cloves, finely chopped
1/2 cup red wine vinegar
1 tsp. salt
1/2 cup chopped cilantro
1/2 cup chopped parsley
2 Tbsp. finely chopped oregano or za’atar
3/4 cup olive oil
Combine all ingredients and let sit for at least an hour in the fridge. We use a food processor which makes the ‘chopping’ aspect of the recipe much faster. If you are using a food processor you can add all the ingredients in and mix together.
