Pea shoots are a type of micro green that allows for several harvests from the same stem. We used Dwarf sugar peas.
These require soaking before planting. We soaked them over night changing the water once. After they germinated we added them to a tray with potting soil and our natural compost fertilizer, covered with a thin layer of soil. They are ready to harvest after about ten days.
They should be harvested leaving the bottom leaves still intact and then 8-10 days after the first harvest you can again trim them from the top again for the 2nd harvest. You can get as many harvests as you want depending on the quality of the soil. After the 3rd harvest we typically allow them to compost and change out the soil to guarantee that we are getting the best possible nutritional value from the soil. These do not need to be refrigerated after cutting.
