#Kimchi (or kimchee) contains vitamins A, B, and C, but its biggest benefit is its #guthealth "healthy bacteria" called lactobacilli which is found in fermented foods like kimchi & yogurt. To make:
1 Napa cabbage cut
4 carrots shredded
1/4-1/2 cup kosher salt
Dash of sugar
garlic
ginger
Red pepper flakes
1 large daikon radish, peeled and shredded
Once everthing is mixed squeeze for a few minutes then place in large bowl and allow liquid to cover it- we used stones placed in a zip lock with a glass plate. Keep in a cool dark place for 1 week- check on it daily to make sure the liquid is still covering it and add water if necessary.
